Take a large stockpot, and pour 4tbsps of olive oil in it. Heat the olive oil on medium-low heat. When the oil is hot, add 2 cups chopped leeks, only the white parts, 2 tbsps of minced garlic, salt to taste and soften them. It takes about 7-8 minutes to soften these ingredients.
